Sound of music – Strudel

My task for this week, is to make STRUDEL.  I have a fascination with making meals I see in movies. For example, I am sure you would love to know, that my wedding was based off the movie “Steel Magnolias”.  Everything except the bleeding Armadillo grooms cake, was present.

Here is this weeks venture! Gluten Free, and still sticks with my “movie food” theme.

Apple Strudel


Makes 8 Strudels


  • 8 large organic McIntosh apples, peeled and sliced
  • 1 Tbsp. sugar
  • 1/4 cup fresh rosemary, very finely chopped
  • 1/4 cup sugar
  • 2 tsp. ground cinnamon, plus more for topping
  • 1/4 tsp. all-spice
  • 1 1/2 cup Bob’s Red Mill All-Purpose Flour
  • 1 tsp. baking powder
  • 1/3 tsp. sea salt
  • 1/4 tsp. fresh organic orange zest
  • 2 Tbsp. freshly squeezed organic orange juice
  • 1/4 tsp. gluten-free almond extract
  • 2 large eggs


  1. Preheat oven to 350 degrees F.  Spray a baking dish with nonstick baking spray.  Sprinkle with 1 Tbsp. sugar and rosemary.  Add sliced apples; spread evenly.
  2. In a large bowl, combine flour, sugar, baking powder, sea salt and orange zest.  Add orange juice, almond extract and egg; mix well to combine and form a mealy texture.  Transfer mixture on top of apples in the baking dish.  Sprinkle with additional ground cinnamon.
  3. Bake for 40 minutes or until golden brown.
  4. Enjoy!


PIZZA PIZZA! The Best Monday night thing, ever invented.  12 minutes at 400 degrees, and you are set for dinner.  Add some salad, some fruit, whatever, and you are set for the night!  All natural- From Whole Foods.

Free for all you say? Not really. More like, free to splurge a little. After a week of total organic food ( and a sneak in here and there of non-organic items), I feel I deserve a treat. Cici’s pizza, and a redbox movie do it.

Food review #1 – The Burrito

Healthy, tasty, Satisfying

Let me just say, I have been searching for a burrito like this. Tasty, satisfying, and healthy. I am a bit skeptical when it comes to trying new organic things, my fear? Flavor, or lack there of. This burrito has the perfect blend of everything, and when something is so good, that I don’t have to add salt or any other seasonings or added toppings, that is when I know I chose a great product. Do you have a great organic product that you buy , regularly, and it tastes wonderful? Share it please!

The goal of  eating organic foods is to promote health and productivity of  communities of soil life, plants, animals, and people.

Livestock must have access to the outdoors, fresh air, water, sunshine, grass and pasture, and are fed 100% organic feed. They must not be given or fed hormones, antibiotics or other animal drugs in their feed. If an animal gets sick and needs antibiotics, they cannot be considered organic. Feeding of animal parts of any kind to ruminants that, by nature, eat a vegetarian diet, is also prohibited. Thus, no animal byproducts of any sort are incorporated in organic feed at any time.

About a year ago, my husband and I moved to the Midwest, where many changes were taking place for us.  Among all this change, we considered making it the best for everyone included.  It sounds abrupt, but in one instance we found our selves eating Doritos, Twinkies, Oreos , and the next… watching “Jamie Oliver’s Food Revolution”.    That show changed our entire way of thinking.. to school lunches, bagged lunches, all the preservatives and on top of all that, the sugar we were putting into our bodies and our kids.  Now I must say, this isn’t a choice for everyone, and I certainly don’t want to tell anyone how to feed their families, but this changed our lives, for the better.

We tried one of Jamie Oliver’s recipes :

After this dish, I was hooked.  Now, after a year, I can say we are pretty much 100& organic. I say pretty much, because there is that occasional “slip” of fast food ( which we will go into later).

My point is, eating organic doesn’t mean you have to eat everything organic, all the time, but if you are going to do it, I can point you in an easy direction.
